Ingredients

  • 160 g porridge oats, blitzed
  • 150 ml milk
  • 50 g Glenilen Farm Natural Yoghurt
  • 100 g banana, mashed

Method
 

  • Preheat the oven to 180C/160C fan.
  • Line a 9" square baking tin with baking paper.
  • Mix the oats, milk, yoghurt, honey, and a mashed banana.
  • Let them soak for a few minutes to allow the milk to absorb.
  • Press into the bottom of the tin and bake in the preheated oven for 20-25 minutes.
  • Cool in the dish for a few minutes before removing and cutting.

Baby Porridge with Stewed Apple

Ingredients

Porridge

  • 40 g oats, blitzed
  • 240 ml milk (or breast milk or fortified milk)
  • 50 ml water

Apple Purée

  • 1 Bramley apple
  • 3 tbsp water
  • 1/2 tsp honey

Method
 

  • Blitz the porridge oats in a food processor.
  • Add them to a saucepan with the milk and over a medium heat, cook for 3-4 minutes.
  • Set aside to cool, and once cooled, adjust with water if too thick.
  • Peel, core, and chop the apple and place it in a saucepan with the water and cook for a few minutes until a puree is reached. You can adjust the sweetness with a drop of honey as needed.
  • Serve the porridge in a dish with the stewed apple on top.

Cheese & Veggie Quesadillas

Ingredients

  • 1 tbsp vegetable oil
  • 1/2 leek, sliced
  • 1 pepper, sliced
  • 2 carrots, grated
  • 70 g grated cheddar cheese
  • Salt & pepper
  • 10 x 6" flour tortillas
  • 50 g cream cheese
  • 20 g Glenilen Farm Natural Yoghurt

Method
 

  • To make the filling, in a pan, add the oil, leeks, and peppers.
  • Cook these over a gentle heat for 8-10 minutes until the vegetables have softened.
  • To this, add the grated carrot, season, and cook for a few minutes.
  • Remove and set aside to cool.
  • Once cold, add the grated cheese and mix well.
  • For the sauce, into a bowl, add the cream cheese and yoghurt, season and mix.
  • Arrange all 10 wraps on the table and divide the sauce over each.
  • Top 5 of them with the vegetable filling and sandwich with the remaining tortillas.
  • Onto a pan set over medium-low heat, cook the quesadilla on each side for 4-5 minutes, or until the filling is hot and the cheese is melted.
  • Remove from the heat and cut each one in half and then into bite-sized triangles.

Mini Pizza Bagels

Ingredients

Bagels

  • 120 g plain flour
  • 125 g Glenilen Farm Natural Yoghurt
  • 1 tsp baking powder
  • Pinch salt
  • Cold Water
  • 1 egg for egg wash
  • Sesame/poppy seeds (optional)

Topping

  • 8 tbsp tomato sauce
  • 6 slices of pepperoni
  • Grated mozzarella

Method
 

  • To make the bagels, into a bowl add the flour, yoghurt, baking powder and salt.
  • Mix to form a soft dough.
  • You may need to add a drop of water to help bind.
  • Roll these into 4 small rounds and, using your finger, make a hole in the center of each.
  • Preheat your oven to 200C/180C fan.
  • Egg wash the bagels and sprinkle the sesame and poppy seeds over the top.
  • Bake in the preheated oven for 12-15 minutes or until golden brown all over.
  • Remove and allow to cool.
  • Once cold, cut in half, spread each half with tomato sauce, top with cheese and pepperoni slices and pop back into the oven for 5 minutes.
  • Enjoy warm or cold the next day.

Ingredients

  • 6 large eggs
  • 45 g Glenilen Farm Natural Yoghurt
  • Salt & pepper
  • 100 g cooked, diced ham (optional)
  • 50 g baby spinach, chopped
  • 1/2 red pepper, diced
  • 6 cherry tomatoes, halves
  • 2 spring onions, chopped
  • 70 g red cheddar cheese, grated

Method
 

  • Preheat your oven to 180C/160C fan.
  • Grease 6 muffin inserts with oil.
  • Whisk eggs, yoghurt, salt and pepper.
  • Stir through the ham, vegetables and cheese.
  • Divide the mixture between the 9 inserts.
  • Bake for 20-25 minutes, or until the top is lightly golden and the center springs back when touched.
  • Served immediately, or chill and store in an airtight container for up to 3 days.

Ingredients

Smoothie

  • 1 banana
  • 200 g frozen mixed berries
  • 200 ml Glenilen Farm natural yoghurt
  • 100 g fresh berries
  • 1 tbsp honey

Fruit & Nut Granola (Serves 4)

  • 20 ml coconut oil
  • 25 ml maple syrup
  • 90 g porridge oats
  • 20 g mixed seeds
  • 1/2 tsp ground cinnamon
  • Pinch salt
  • 20 g whole almonds, chopped
  • 20 g walnut halves, chopped
  • 25 g desiccated coconut
  • 50 g dried fruits

To Decorate

  • 1 banana, sliced
  • 1 kiwi, sliced
  • 50 g fresh berries
  • 50 g granola

Method
 

  • For the granola, preheat your oven to 190C/170C fan.
  • Line a baking tray with parchment.
  • Add the oats, nuts, seeds, cinnamon & salt to a bowl. Mix.
  • Heat the coconut oil and maple syrup.
  • Add this liquid to the dry ingredients and mix to combine.
  • Spread this onto the lined tray and place in the oven for 15 minutes.
  • At this point, remove and stir the granola to stop it from burning.
  • Place back in the oven for another 15 minutes.
  • Once baked and golden brown all over, remove and cool.
  • Once cooled, add the diced apricot and desiccated coconut.
  • For the smoothie, add all the ingredients to a blender and blitz until smooth.
  • Scoop into two serving bowls and top with granola and fresh fruit.

Ingredients

Crumble Mix

  • 100 g plain flour
  • 100 g porridge oats
  • 1/4 tsp bicarbonate of soda
  • Pinch ground cinnamon
  • 25 g butter, melted
  • 25 ml vegetable oil
  • 30 ml apple juice
  • 25 ml maple syrup

Filling

  • 120 g Glenilen Farm Yoghurt
  • 180 g frozen mixed berries
  • 50 ml maple syrup
  • 25 g corn flour

Method
 

  • Preheat the oven to 180C/160C fan.
  • Line an 8" square baking tin with parchment paper.
  • For the crumble mix, place the flour, oats, soda and cinnamon into a bowl and mix.
  • To this add the butter, oil, maple and apple juice.
  • Mix to form a crumble mix.
  • Add 1/2 of this mix to the base and press down with a spoon to compact.
  • Place in the fridge while you make the filling.
  • For the filling, add the yoghurt, frozen berries, corn flour and maple syrup to a bowl and mix well.
  • Spoon this into the chilled base and spread to cover.
  • Sprinkle the remaining crumble mix on top and bake in the preheated over for 40 minutes or until golden brown all over.
  • Remove, chill and portion.

Ingredients

  • 1 Banana
  • Handful of Strawberries
  • Handful of Grapes
  • 1 Apple
  • 2 pots Glenilen Farm Kids Vanilla Yoghurt
  • 3 tbsp Maple Syrup
  • Sprinkle of Cinnamon

Method
 

  • Chop all the fruit into bite size chunks
  • Sprinkle the juice of half a lemon over the fruit which will help prevent discolouration of the fruit.
  • Place a piece of fruit onto a skewer – choosing a different piece each time
  • Once all fruit is on the skewers – open a pot of vanilla kids yoghurt and dip the skewer, coating the fruit in the yoghurt. The perfect snack for kids but can be enjoyed by all ages.

Strawberry Shortbread Frozen Yoghurt

Ingredients

  • 550 g Fresh Strawberries, halved
  • 500 g Glenilen Farm Natural Yoghurt with Strawberries
  • 397 g Can of Condensed Milk
  • 2 tsp Vanilla Extract
  • 250 ml Double Cream
  • 8 Shortbread Biscuits, crushed

Method
 

  • Put 400g strawberries ina food processor and blitz until smooth.
  • Chop the remaining strawberries into small pieces and set aside.
  • Add the yoghurt, ondensed milk and vanilla to the processor and blitz to combine.
  • Lightly whip the cream until it’s just holding its shape then add roughly one-third of the strawberry mixture, fold together with a spatula, then add the remaining strawberry mixture and the chopped strawberries and stir through.
  • Layer the frozen yoghurt- Pour half into a freezer-proof/lunchbox container, scatter over half the shortbread pieces and if you have extra chopped strawberries add them, then cover with the remaining yogurt mixture, crushed shortbread and freshly chopped strawberries and freeze for at least 4 hrs until solid. Remove from the freezer 10-15 mins before scooping. Freeze for up to 2 months.

Ingredients

  • 185 g Self Raising Flour (plus extra for dusting)
  • 250 g Glenilen Farm Natural Yoghurt
  • 6 tbsp Pasta Sauce (any flavour)
  • 150 g Grated Cheese

Method
 

  • Preheat the oven to 180C/160C/Gas Mark 5
  • In a bowl add the flour and yoghurt and mix well together
  • Pop onto a floured surface and begin rolling with a rolling pin until about 1cm thick
  • Top with some pasta sauce and cheese (add whatever toppings you like, Ham, pineapple)
  • From the long end begin to roll the dough in towards you.
  • Once rolled up fully, cut into thick slices
  • Place onto a baking tray lined with brown paper
  • Place into the oven for 25-30 minutes until golden brown.
  •  Serve warm or let cool and place into your lunch box.
