Chicken BLT Stuffed Avocado

Ingredients

  • 2 cooked bacon slices, diced
  • 70 g cooked chicken, chopped
  • 3 cherry tomatoes, halved
  • 15 g baby gem lettuce, chopped
  • Chopped parsley
  • 100 g Glenilen Farm Natural Yoghurt
  • 2 ripe avocados
  • Salt to taste
  • Fresh parsley to garnish

Method
 

  • Into a bowl, add the bacon, chicken, tomatoes and lettuce.
  • To this, add the natural yoghurt and mix to combine.
  • Add the chopped parsley, taste and adjust the seasoning.
  • Carefully cut two avocados in half and remove the stone. Season with salt.
  • I like to cut a small piece of the base, so the avocado half sits level on the plate.
  • Fill the center of each avocado with the chicken BLT filling.
  • Top with parsley and serve.
