Chicken BLT Stuffed Avocado

Ingredients
- 2 cooked bacon slices, diced
- 70 g cooked chicken, chopped
- 3 cherry tomatoes, halved
- 15 g baby gem lettuce, chopped
- Chopped parsley
- 100 g Glenilen Farm Natural Yoghurt
- 2 ripe avocados
- Salt to taste
- Fresh parsley to garnish
Method
- Into a bowl, add the bacon, chicken, tomatoes and lettuce.
- To this, add the natural yoghurt and mix to combine.
- Add the chopped parsley, taste and adjust the seasoning.
- Carefully cut two avocados in half and remove the stone. Season with salt.
- I like to cut a small piece of the base, so the avocado half sits level on the plate.
- Fill the center of each avocado with the chicken BLT filling.
- Top with parsley and serve.
