Baked Mixed Berry Oatmeal

Ingredients
- 180 g Glenilen strawberry yoghurt
- 2 large eggs
- 370 ml milk
- 50 ml maple syrup
- 1 tsp vanilla extract
- 0.5 tsp ground cinnamon
- 40 g butter, melted
- 215 g porridge oats
- 1.5 tsp baking powder
- 0.5 tsp salt
- 200 g mixed fresh berries
- 50 g chopped almonds (optional)
Garnish
- 150 g mixed fresh berries
Method
- Preheat your oven to 200C/180C fan.
- Into a bowl, add the maple syrup, vanilla, milk, egg, Glenilen strawberry yoghurt and melted butter.
- Whisk this to combine and set aside.
- In a separate bowl, add the oats, cinnamon, baking powder, salt and nuts (if using) and mix.
- Into the base of a 10” x 7” deep oven proof baking dish, sprinkle on the mixed berries.
- Top them with the dry oat mixture and finally pour over the wet mixture.
- Make sure all the oats have been soaked and allow to sit for 5 minutes.
- Add the remaining berries on top.
- Bake in the preheated oven for 40-45 minutes or until golden brown all over.
- Allow to cool slightly and serve with a side of the Glenilen strawberry yoghurt.
