White Chocolate and Berry Muffins
These muffins are perfect as a break time treat

Ingredients
- 210 g Self-Raising Flour
- 70 g Golden Caster Sugar
- 2 tbsp Vegetable Oil
- 2 Eggs, lightly beaten
- 250 g Glenilen Farm Natural Yoghurt
- 150 g Frozen Mixed Berries
- 100 g White Chocolate Chips
Method
- Preheat oven to 180°C/350°F/Gas Mark 4
- Sift flour and sugar into a large bowl. Stir the oil,eggs, yogurt, berries (make sure the berries are still frozen) and chocolate into the flour mixture. Do not overmix.
- Spoon the mixture into muffin cases. Bake for about 35 minutes. Carefully remove the muffins from the tray and place on a wire rack to cool down.
- Enjoy as a tasty snack
