White Chocolate and Berry Muffins

These muffins are perfect as a break time treat

  • 210 g Self-Raising Flour
  • 70 g Golden Caster Sugar
  • 2 tbsp Vegetable Oil
  • 2 Eggs, lightly beaten
  • 250 g Glenilen Farm Natural Yoghurt
  • 150 g Frozen Mixed Berries
  • 100 g White Chocolate Chips


  • Preheat oven to 180°C/350°F/Gas Mark 4
  • Sift flour and sugar into a large bowl. Stir the oil,eggs, yogurt, berries (make sure the berries are still frozen) and chocolate into the flour mixture. Do not overmix.
  • Spoon the mixture into muffin cases. Bake for about 35 minutes. Carefully remove the muffins from the tray and place on a wire rack to cool down.
  • Enjoy as a tasty snack
