Yoghurt Parfait

Ingredients

  • 225 g Glenilen Farm Natural Live Yoghurt or your favouite Glenilen Farm Yoghurt
  • 200 g Homemade Granola
  • 200 g Frozen Mixed Berries
  • 2 tsp Honey

Method
 

  • Get 2 glasses, layer with 1 tablspoon of frozen berries, 2 tablespoons of yoghurt, and 2 tablespoons of homemade granola
  • Continue to layer until the glass is full
  • top it off with yoghurt, a sprinkle of granola and a drizzle of honey
  • Serve and Enjoy!

Buttery & Crispy Garlic Potatoes

These potatoes are the perfect addition to any dinner recipe, a real treat for all to enjoy!

Ingredients

  • 1 Packet of Baby Potatoes
  • 80 g Glenilen Farm Farmhouse Butter
  • 3 Sprigs Rosemary
  • 4 Garlic Cloves

Method
 

  • Boil your baby potatoes for 10-12 minutes, until a knife can easily pierce through.
  • Once boiled, slice in half and add to a baking dish.
  • Cut 80g butter and place over the sliced potatoes.
  • Roughly slice 4 cloves or garlic and sprinkle over the potatoes.
  • Add some sprigs of rosemary and stir the potatoes.
  • Place in the oven at gas Mark 6 for 40 minutes.
  • Once removed from the oven give the potatoes one final mix through and top with some more fresh rosemary.

Coronation Chicken Toasties

Ingredients

  • 1.5 tbsp Curry Powder
  • 2 tbsp Mango Chutney
  • 2 tbsp Mayonnaise
  • 2 tbsp Glenilen Farm Live Natural Yoghurt
  • 1 Lime Juiced
  • 2 Cooked Chicken Fillets, shredded
  • Grated Red Cheddar (optional to add to the toastie)
  • 6 Slices of Bread
  • Some Butter for Toasting

Method
 

  • Add the curry powder, chutney, Mayo, yoghurt and lime juice to a bowl and mix well.
  • Take two forks and shred the cooked chicken fillets.
  • Add the chicken to the mixture and stir well until combined.
  • Divide the chicken mixture evenly between the slices of bread, top with some grated cheese, and spread a small bit of butter on the outer sides of the bread.
  • Grill in a pan or a sandwich maker for about 4-5 minutes or until the outside is golden brown.
  • Enjoy

Mild Chicken Curry

A deliciously mild curry, the perfect midweek dinner for all the family

Ingredients

  • 1 tbsp Sunflower Oil
  • 1 Large Onion, finely Chopped
  • 3 Garlic Cloves, Chopped
  • 1 tsp Ground Coriander
  • 2 tsp Yellow Mustard Seeds
  • 2 tsp Garam Masala
  • 1 tsp Ground Cumin
  • 500 g Pack of Chicken Thighs
  • 1 Chicken Stock Cube
  • 250 g Glenilen Farm Yoghurt, at room temperature

Method
 

  • Heat the oil in a pan. Fry the onions gently until soft. Add the garlic,mustard seeds, garam masala and cumin and cook for 1 - 2 minutes
  • Add the chicken and cook for 10 mins over a gentle heat, Pour in 300 ml boiling water until almost covered.
  • Stir in the stock cube. Simmer for around 45 mins - 1 hour with the lid off so there is a small amount of thickened sauce at the bottom of the pan
  • Stir in the yogurt and sultanas, heat through gently and serve with a scatter of coriander and a lime wedge

Christmas Cranberry, Maple and Pecan Bread

Ingredients

  • 430 g Plain Flour
  • 260 g Caster Sugar
  • 1 tsp Salt
  • 2 tsp Baking Powder
  • 1 tsp Cinnamon
  • 3 Large Eggs
  • 175 ml Sunflower Oil
  • 125 ml Whole Milk
  • 4 tbsp Maple Syrup
  • 225 g Drained Pineapple
  • 225 g Pecan Nuts
  • 225 g Ripe Banana
  • 255 g Fresh Cranberries

Method
 

  • Preheat the oven to 150c/130Fan/Gas Mark 2.
  • Sieve flour into a large bowl, then add sugar, salt, baking powder and cinnamon.
  • Beat the eggs in a bowl, whisk in the sunflower oil, milk and maple syrup, fold into dry ingredients.
  • Liquidise the pineapple, roughly chop the pecans and mash the banana, add to the mix. Gently fold in, adding the cranberries last.
  • Grease and flour two 2lb loaf tins, lining the bottom with baking parchment. Divide the mixture between the 2 tins.
  • Bake for 1 hour 15 minutes, check to make sure the bread is fully cooked, once ready, remove from the oven and leave to cool for 10 mins in the tins before removing. Cool completely on a wire rack.

Easy Almond Macaroon

A soft chewy biscuit reminiscent of childhood Christmas.

Ingredients

  • 30 g Ground Rice or Semolina
  • 115 g Ground Almonds
  • 2 Egg Whites
  • 200 g Caster Sugar
  • 8 Blanched Almonds, halved to decorate.

Method
 

  • Preheat the oven to 150c Fan/130C/Gas Mark 2. Line 2 baking trays with baking parchment.
  • Put the egg whites into a bowl, dip in the blanched almonds and put to the side.
  • Whisk the egg whites until they form soft peaks.
  • Gently fold in the ground almonds, sugar and ground rice or semolina.
  • Spoon the mixture in teaspoonfuls onto the lined baking sheets and smooth out with the back of a spoon to form circles. Place an almond half in the centre of each.
  • Leave to cool on the trays for a few moments, then lift off and allow to cool completely on a wire rack.

Luxurious Mince Pies

Our mince pie recipe is one of the best, complimented with the delicious mincemeat filling and a crisp but crumbly pastry.

Ingredients

For the Mincemeat (Filling)

  • 340 g Eating Apple, peeled, cored and finely chopped
  • 227 g Melted Butter
  • 227 g Raisins
  • 227 g Sultanas
  • 227 g Currants
  • 114 g Candied peel cherries, chopped
  • 170 g Blanched Chopped Almonds
  • 170 g Dark Brown Sugar
  • 1 Orange, finely grated rind
  • 1 Lemon, finely grated rind
  • 1 tsp Ground Cinnamon
  • 0.5 tsp Ground Nutmeg
  • 0.5 tsp Ground Cloves
  • 0.5 tsp Salt
  • 30 ml Whiskey

For the Pastry

  • 275 g Butter
  • 450 g Plain Flour
  • 75 g Ground Almonds
  • 50 g Icing Sugar
  • 2 Egg Yolks
  • 30 ml Milk, if necessary to bind

Method
 

For the Filling

  • Melt the butter, mix all the ingredients together in a large bowl.
  • Cover and leave overnight, or up to 2 days.
  • Fill into clean sterilised dry jars - P.S. - Makes for a lovely gift too!

For the Pastry

  • Mix flour, almonds and sugar. 
  • Rub in the butter until it looks like breadcrumbs 
  • Make a well in the centre and add the egg yolks blended with 1 teaspoon of the milk. 
  • Stir gently and add more milk until you have a dough. 
  • Cover with cling film and put in the fridge for at least an hour. 
  • Preheat the oven to 230C Fan/250C/Gas Mark 8.
  • Remove pastry from the fridge and place onto a floured surface. Using a rolling pin, roll out the pastry until roughly 0.5/1cm thickness.
  • Using a scone cutter, cut out the discs for the base and place into a non stick muffin tray.
  • Roll out the dough again and using a star scone cutter, cut out the tops for the pies.
  • Once the pastry is ready, fill with your mincemeat mixture and pop on the stars.
  • Brush each mince pie with a little milk.
  • Place into the preheated oven for 30-40 minutes, until the pastry is nice and golden brown.
  • Leave in the tray to cool for 20 minutes before removing, as the pastry is fresh and may crumble.
  • TIP - These mince pies are also freeze really went, great to make in advance of Christmas!
