Christmas Yoghurt Fruit Cake

Ingredients

Fruit Cake

  • 125 g butter, soft
  • 150 g caster sugar
  • 2 large eggs
  • 200 g Glenilen Natural Yoghurt
  • 1 lemon zest
  • 200 g cooked apple
  • 125 g dried currants
  • 250 g self-raising flour
  • 1/2 tsp bread soda
  • 2 tsp mixed spice

Topping

  • 100 g Glenilen Natural Yoghurt
  • 50 g dried currants
  • Fresh mint

Method
 

  • Preheat your oven to 180C/160C fan.
  • Grease and flour a 9.5" loose bottom cake tin.
  • Into a bowl, add the soft butter and sugar. Cream until soft and pale.
  • To this, add the eggs, gradually, mixing between each addition.
  • Once combined, add in the Glenilen Natural Yoghurt, stewed cooled apple, zest and currants.
  • Mix together to combine.
  • To this sieve in the flour, bread soda and mixed spice.
  • Mix to combine and scoop into the prepared tin.
  • Bake in the preheated oven for 55-60 minutes or until a skewer inserted comes out clean.
  • Remove and allow to cool for 5 minutes before removing from the tin to cool on a wire rack.
  • To serve, cover the top of the cooled cake with yoghurt, sprinkle on the currants and finish with a few sprigs of mint.

Mild Chicken Curry

A deliciously mild curry, the perfect midweek dinner for all the family

Ingredients

  • 1 tbsp Sunflower Oil
  • 1 Large Onion, finely Chopped
  • 3 Garlic Cloves, Chopped
  • 1 tsp Ground Coriander
  • 2 tsp Yellow Mustard Seeds
  • 2 tsp Garam Masala
  • 1 tsp Ground Cumin
  • 500 g Pack of Chicken Thighs
  • 1 Chicken Stock Cube
  • 250 g Glenilen Farm Yoghurt, at room temperature

Method
 

  • Heat the oil in a pan. Fry the onions gently until soft. Add the garlic,mustard seeds, garam masala and cumin and cook for 1 - 2 minutes
  • Add the chicken and cook for 10 mins over a gentle heat, Pour in 300 ml boiling water until almost covered.
  • Stir in the stock cube. Simmer for around 45 mins - 1 hour with the lid off so there is a small amount of thickened sauce at the bottom of the pan
  • Stir in the yogurt and sultanas, heat through gently and serve with a scatter of coriander and a lime wedge

Christmas Cranberry, Maple and Pecan Bread

A moist sweet bread, full of variety.

Ingredients

  • 430 g Plain Flour
  • 260 g Caster Sugar
  • 1 tsp Salt
  • 2 tsp Baking Powder
  • 1 tsp Cinnamon
  • 3 Large Eggs
  • 175 ml Sunflower Oil
  • 125 ml Whole Milk
  • 4 tbsp Maple Syrup
  • 225 g Drained Pineapple
  • 225 g Pecan Nuts
  • 225 g Ripe Banana
  • 255 g Fresh Cranberries

Method
 

  • Preheat the oven to 150c/130Fan/Gas Mark 2.
  • Sieve flour into a large bowl, then add sugar, salt, baking powder and cinnamon.
  • Beat the eggs in a bowl, whisk in the sunflower oil, milk and maple syrup, fold into dry ingredients.
  • Liquidise the pineapple, roughly chop the pecans and mash the banana, add to the mix. Gently fold in, adding the cranberries last.
  • Grease and flour two 2lb loaf tins, lining the bottom with baking parchment. Divide the mixture between the 2 tins.
  • Bake for 1 hour 15 minutes, check to make sure the bread is fully cooked, once ready, remove from the oven and leave to cool for 10 mins in the tins before removing. Cool completely on a wire rack.
