Waldorf Salad

Ingredients
- 100 g Glenilen Natural Yoghurt
- 1 tbsp mayonnaise
- 1 tbsp lemon juice
- 1/2 tbsp honey
- 2 Granny Smith apples, diced
- 80 g celery, diced
- 150 g seedless red grapes, halved
- 100 g walnuts, chopped
- 2 tbsp fresh parsley, chopped
- Salt to taste
- 2 heads of baby gem lettuce
Method
- To make the dressing, add the natural yoghurt to a bowl with the mayonnaise, lemon juice and honey.
- Mix to combine and keep chilled until needed.
- Into a large bowl add the chopped apples, celery, walnuts, grapes and parsley. Mix to combine.
- To this, add in the dressing and mix well. Adjust seasoning if needed.
- Arrange the washed baby gem lettuce leaves around the outside of the bowl and fill the centre with the Waldorf salad.
- Top with chopped parsley and a sprinkling of walnuts and serve.
