Waldorf Salad

Ingredients

  • 100 g Glenilen Natural Yoghurt
  • 1 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 1/2 tbsp honey
  • 2 Granny Smith apples, diced
  • 80 g celery, diced
  • 150 g seedless red grapes, halved
  • 100 g walnuts, chopped
  • 2 tbsp fresh parsley, chopped
  • Salt to taste
  • 2 heads of baby gem lettuce

Method
 

  • To make the dressing, add the natural yoghurt to a bowl with the mayonnaise, lemon juice and honey.
  • Mix to combine and keep chilled until needed.
  • Into a large bowl add the chopped apples, celery, walnuts, grapes and parsley. Mix to combine.
  • To this, add in the dressing and mix well. Adjust seasoning if needed.
  • Arrange the washed baby gem lettuce leaves around the outside of the bowl and fill the centre with the Waldorf salad.
  • Top with chopped parsley and a sprinkling of walnuts and serve.
