Tasty fish cakes accompanied with a delicious tartare sauce

Ingredients
400gChopped mixed fish such as salmon/smoked haddock/cod
2Eggs
150gBreadcrumbs
100gLeftover Mashed Potatoes
80gFrozen Garden Peas
Salt and Pepper
Zest of 1 Lemon
Tartare Sauce
Juice of 1 Lemon
8gherkins, chopped
200gGlenilen Farm Natural Yoghurt
2 tspCapers
Method
Preheat the oven to180C/350F/Gas mark 4
Divide the mixture into 6-8 fish cakes depending on size and place into a fridge for 1 hr to firm up. Place all the chopped fish in the oven and cook for 20 minutes
Divide the mixture into 6-8 fishcakes and place into the fridge for 1 hour
Roll the fish cakes in breadcrumbs, cover well and placeof a tray and into the preheated oven for 25 minutes
4. Serve with a salad and our Glenilen Farm tartare sauce(see below)
