Fish Cakes with Greek Style Tartare Sauce

Tasty fish cakes accompanied with a delicious tartare sauce

Ingredients

  • 400 g Chopped mixed fish such as salmon/smoked haddock/cod
  • 2 Eggs
  • 150 g Breadcrumbs
  • 100 g Leftover Mashed Potatoes
  • 80 g Frozen Garden Peas
  • Salt and Pepper
  • Zest of 1 Lemon

Tartare Sauce

  • Juice of 1 Lemon
  • 8 gherkins, chopped
  • 200 g Glenilen Farm Natural Yoghurt
  • 2 tsp Capers

Method
 

  • Preheat the oven to180C/350F/Gas mark 4
  • Divide the mixture into 6-8 fish cakes depending on size and place into a fridge for 1 hr to firm up. Place all the chopped fish in the oven and cook for 20 minutes
  • Divide the mixture into 6-8 fishcakes and place into the fridge for 1 hour
  • Roll the fish cakes in breadcrumbs, cover well and placeof a tray and into the preheated oven for 25 minutes
  • 4.   Serve with a salad and our Glenilen Farm tartare sauce(see below)

Tartare Sauce

  • Add all the ingredients for the sauce into the bowl
  • Taste to see if it needs any other seasonings
  • Serve with our fishcakes and enjoy!
